You have many options, and I am going to say two of them:
First, you can easily limit you angle by using Mate>Advanced mates>Angle limit> and then carefully insert the minimum and the maximum values there.
Second, you can use the limit angle mate and then in the entities to mate, for instance, if your parts are perpendicular, select one part's top plane and then another parts right plane and not the faces you need to limit the angle. OR selects one face of part 1 and a plane of second part.
