how does one built a strong portfolio with designed using solid works parts

If you want to showcase your cad skills, then start by practising creating 3d models / parts based on everyday objects (examples are things like keyboard, window frame, maybe a carport legs...whatever grabs your interest.).
Uploading simple models onto sites like Grabcad, shows your knowledge and understanding of the functions and tools within solidworks.
Then combine your objects into assemblies to further showcase how you utilize various tools in solidworks to make complex assemblies.
Since you havent stated your area (preferred area) of expertise, the advice given cannot be more specific, but i hope this helps.
