To My understanding Creation is same as like of through curve Mesh. Also it allows to add and remove curves, both during creation and editing.
But Through curve Mesh gives more Flexibility by forcing surface built through resulting in a single patch,same time studio surface Fails
As of Name the Surface is for styling
